Collaboro, inoltre, con la scuola di cucina Funny Veg Academy – Milano, in qualità di docente di cucina etnica.


Ho acquisito il diploma di cucina vegana presso Italian Food Academy – Milano – sotto la supervisione dello Chef Davide Larise. Ho seguito corsi professionalizzanti presso Funny Veg Academy con gli Chef Simone Salvini e Luca Andrè. Inoltre, ho completato Food Future Institute – Los Angeles – un Master di cucina vegetale ideato dallo Chef Matthew Kenney.

LA MIA STORIA

Se un giorno mi avessero detto che sarei diventata vegana avrei riso.

Non sono mai stata una divoratrice di carne o pesce, ma di uova e latticini si, sebbene sia fortemente intollerante a questi ultimi. Il pensiero di eliminarli dalla mia alimentazione non mi era mai sfiorato per l’anticamera del cervello, fino a qualche anno fa.

All’epoca attraversavo un momento personale piuttosto tumultuoso; non mi sentivo in pace né con me stessa né con il mondo che mi circondava e, come nel più classico dei cliché, il disagio si riversò nel cibo. Persi gusto per la vita e per la tavola.
Smisi semplicemente di mangiare ritrovandomi per molti mesi risucchiata in un vortice negativo che mi aveva trasformata nell’ombra di me stessa, sia fisicamente che mentalmente.

Grazie al cielo nulla è permanente, perciò quando arrivò il momento di rimettermi in sesto cominciai a reintrodurre gradualmente tutti gli alimenti di origine animale che più mi piacevano, con la conseguente scoperta di non riuscire a sopportare più alcuna consistenza ed alcun odore.

 “E adesso cosa mangio?!”, mi chiesi.

Il mio viaggio nel mondo vegan è iniziato cosi, con una domanda semplice che però raccoglieva in sé una storia che per me aveva un grande significato: la mia.
Mi documentai per scoprire quali fossero i nutrienti di cui avessi bisogno per rimanere in salute. Sperimentai ricette su ricette trovando tutto estremamente gustoso e ripresi peso e sorriso.
Se devo essere sincera pensavo che si sarebbe trattato di un momento transitorio ed invece è successo che mi sono innamorata della cucina vegetale al punto da sposare questa filosofia di vita con tutto il cuore, senza sentire alcuna mancanza di quella precedente.  Prima di questo passaggio non avevo mai riflettuto su quale fosse il mio impatto sull’ambiente, su cosa succedesse agli animali destinati alla catena alimentare, sulla qualità del cibo di cui mi nutrivo.  Ho scoperto che potevo cambiare le cose partendo semplicemente da me, prendendomi cura di me stessa e cercando di rispettare il nostro pianeta, animali inclusi, in un modo attivo che non avevo mai sperimentato prima. 

Così un giorno ho deciso di approfondire ulteriormente le mie conoscenze specializzandomi a livello professionale e seguendo corsi di cucina in giro per il mondo durante i miei viaggi.

Dall’esperienza personale con la mia famiglia ho capito che cucinare per gli altri è il modo più diretto ed efficace per mostrare che la cucina vegetale è molto più di Tofu e Piatti Pronti e che a differenza di quanto possa sembrare superficialmente, è ricca di creatività, di sapore, di bellezza ed è pure sostenibile.

ABOUT ME

My name is Simona Zambetti, a gourmet vegan cuisine Personal Chef , a restaurant cunsaltant and a culinary teacher, both as a private one and as an ethnic cooking teacher at Funny Veg Academy in Milan.

I have acquired my vegan cuisine degree at the Italian Food Academy – Milan – under the supervision of Chef Davide Larise. I took professional courses at Funny Veg Academy with Chef Simone Salvini and Luca Andrè. I also attended and completed Food Future Institute – Los Angeles – a professionalizing program created by Chef Matthew Kenney.

MY STORY

If they ever told me I would have been vegan, I would have laughed.
I have never been a devourer of meat or fish, but of eggs and dairy products yes, although I am strongly intolerant to the latter. The thought of removing them from my diet never crossed my mind until some years ago.

At that time I was going through a rather tumultuous personal moment; I did not feel at peace with myself or with the world around me and, as in the most classic of clichés, the discomfort poured into the food. I lost my taste for life and meals.
I simply stopped eating by finding myself sucked into a negative vortex for many months that had transformed me into the shadow of myself, both physically and mentally.

Thankfully nothing is permanent, so when I got to the point of getting back on my feet I began to gradually reintroduce all the animal products that I liked the most, with the consequent discovery of not being able to bear any consistency and any smell anymore.

“And now what do I eat?!”, I asked myself.

My journey into the vegan world began this way, with a simple question which, however, contained in itself a story that had a great meaning to me: mine.
I did a lot of researches to find out what nutrients I needed to stay healthy. I experimented with recipes finding everything extremely tasty and I gained weight and my smile back.

To be honest, I thought it would have been a transitory moment, but what happened instead was that I fell in love with vegan food to the point of marrying this life philosophy with all my heart, without feeling any lack of the previous one. Before this transition, I had never thought about which is my impact on the environment, about what happens to the food chain animals, about the quality of the food I fed on. I found that I could change things by simply starting from myself, taking care of myself and trying to respect our planet, animals included, in an active way that I had never experienced before.

So one day I decided to further deepen my knowledge by becoming a professional Chef and by atteding cooking classes all around the world during my travels.

From my personal experience with my family I realized that cooking for others is the most direct and effective way to show that a plantbased diet is much more than tofu and ready meals and that despite what it may appereantly seem, it is rich in creativity, taste, beauty and sustainability.
