GALETTE ALLA ZUCCA & FUNGHI PORTOBELLO

A mio parere le cose semplici non sono mai scontate, anzi.
In cucina, così come nella vita, bastano pochi ingredienti e un po’ di amore per creare ricette che riscaldino il cuore.
In questo strano autunno di questo strano anno sento prepotente il bisogno di un lungo caldo abbraccio. Mentre la mia pancia desidera tanta sapida dolcezza. In questa torta salata ritrovo questa magica combinazione.

INGREDIENTI

  • 250 gr pasta sfoglia rettangolare
  • 500 gr zucca Hokkaido
  • 150 gr funghi Portobello
  • 100 gr Tofu
  • ½ porro
  • 1 cucchiaio lievito alimentare secco
  • ½ bicchiere vino bianco
  • 1 patata di medie dimensioni
  • 1 spicchio di aglio
  • 5 foglie di salvia
  • salsa di soia qb
  • sale – pepe – peperoncino qb

– Togliete i semi alla zucca e tagliatela a cubetti senza sbucciarla.

– Pulite con un panno umido i funghi, eliminate delicatamente l’imenoforo con un cucchiaino , cioè la parte spugnosa situata sotto al cappello, ed affettateli.

– Tagliate a lamelle anche il porro ed unitelo insieme alla zucca e ai funghi in una padella antiaderente.

– Irrorate con un goccio di olio evo, aggiungete le foglie di salvia, l’aglio intero sbucciato e cuocete a fiamma alta per qualche minuto.

– Sfumate con il vino bianco, insaporite con un paio di cucchiai di salsa di soia, sale, pepe e peperoncino secondo il vostro gusto. Cuocete a fiamma bassa e con il coperchio fino a quando la zucca si sarà ammorbidita.

– Per ottenere la farcia della torta salata, tritate le verdure con il tofu, il lievito alimentare e regolate di sale.

– Stendete la pasta sfoglia con un mattarello dandole una forma quadrata.

– Bucherellatela con i rebbi di una forchetta e spalmateci sopra il ripieno lasciando circa un cm di spazio sui lati.

– Affettate a lamelle sottili la patata con la buccia e create uno strato di fettine sovrapposte.

– Salatele, pepatele e conditele con un filo di olio. Ripiegate i bordi della sfoglia sopra al ripieno ed infornate a 180° per circa 20 minuti.

PUMPKIN & PORTOBELLO MUSHROOMS GALETTE

In my opinion, simple things are never taken for granted. In the kitchen, as well as in life, just a few ingredients and a little love are what’s necessary to create recipes that warm the heart. In this strange fall of this strange year all I need is a strong warm embrace. And of course my belly claims for some savory sweetness. In this galette I can find this magical combination.

INGREDIENTS

  • 250 gr rectangular puff pastry
  • 500 gr Hokkaido pumpkin
  • 150 gr Portobello mushrooms
  • 100 gr Tofu
  • ½ leek
  • 1 tbsp nutritional yeast
  • ½ white wine glass
  • 1 medium-sized potato
  • 1 clove of garlic
  • 5 sage leaves
  • soy sauce to taste
  • salt, peper, cayenne pepper to taste

– Remove the seeds from the pumpkin and cut into cubes without peeling.

– Clean the mushrooms with a damp cloth, gently remove the hymenophore with a teaspoon, that is the spongy part located under the hat, and slice them.

– Cut the leek into strips and add it together with the pumpkin and mushrooms in a non-stick pan.

– Drizzle the pan with some extra virgin olive oil, add the sage leaves, the whole garlic peeled and cook over high heat for a few minutes.

– Pour in the white wine, season with a couple of tablespoons of soy sauce, salt, pepper and chili according to your taste. Cook over low heat and with the lid on until the pumpkin has softened.

– To get the filling, blend the vegetables coarsely along with the tofu, the nutritional yeast and season with salt.

– Roll out the puff pastry with a rolling pin giving it a square shape.

– Pierce it with the tines of a fork and spread the filling over , leaving about a cm of space on the sides.

– Slice the unpeeled potato thinly and create a layer of slices overlapping.

– Season with salt and pepper and drizzle with a little olive oil. 

– Fold the edges of the pastry on top of the filling and bake at 180 a.s. for about 20 minutes.
