ROLLS DI ZUCCHINE & POMODORI SECCHI

L’appartamento in cui vivo ha una piccola terrazza e durante l’estate mi piace sfruttarla per ritrovare amici che non vedo da tempo. Questo piccolo angolo all’aperto si presta bene per cene informali e tante chiacchiere in compagnia, tra un buon bicchiere di prosecco e l’altro.

I rolls di zucchine e pomodori secchi sono i fingerfood perfetti per accompagnare l’aperitivo.

Non richiedono alcun tipo di cottura, sono pronti in meno di 15 minuti e ti faranno fare una gran bella figura. Potrai prepararli con lieve anticipo e conservarli in frigorifero fino al momento di servirli.

INGREDIENTI

  • 2 zucchine
  • 200 gr tofu al naturale
  • 40 gr mandorle pelate
  • 100 gr pomodori secchi sott’olio
  • 2 c. succo di limone
  • 2 c.ni lievito alimentare secco (facoltativo)
  • 2 c. olio evo
  • 10 foglie di basilico + qb per guarnizione

– Con l’aiuto di un pelapatate, ricava tante strisce sottili dalle zucchine.

– Omogenizza i restanti ingredienti. In caso il composto fosse troppo denso, aggiungi un cucchiaio di acqua.

– Forma un cilindro con una striscia di zucchina e fissa l’estremità con un poco di crema.

– Farcisci l’interno con la crema e decora con una fogliolina di basilico fresco

 The apartment I live in has a small terrace and in summertime I like to invite my friends over. This small outdoor corner is the ideal for informal dinners and lots of chatting while enjoying a glass of prosecco together.

These zucchini and sundried tomatoes rolls are the perfect fingerfood to celebrate with them.

They do not require any type of cooking, they are ready in less than 15 minutes and they are super fancy. You can prepare them slightly in advance and keep them in the refrigerator until serving.

INGREDIENTS

  • 2 zucchini
  • 200 gr tofu
  • 40 gr peeled almonds
  • 100 gr sundried tomateos
  • 2 tbsp lemon juice
  • 2 tsp nutritional yeast (optional)
  • 2 tbps extra vergin olive oil
  • 10 basil leaves + some for decoration

– With the help of a potato peeler, slice the zucchini into thin stripes.

– Blend the remaining ingredients evenly. If the mixture is too thick, add a tablespoon of water.

– Form a cylinder with a zucchini’s stripes and fix the end with a little bit of cream.

– Fill it with the dip and guarnish with a fresh basil leaf
