Finalmente è tornato il caldo. Per chi come me ama la stagione estiva, questo è il momento ideale per alleggerirsi in ogni senso.

A tal proposito, le insalate di cereali si prestano allo scopo: sono estremamente versatili, sazianti e fresche.

Oggi voglio proporti una deliziosa combo con il riso Violet, una eccellenza made in Italy che puoi trovare anche in molti supermercati della grande distribuzione. Si tratta di una varietà di riso unica nel suo genere perché tutto il ciclo vegetale è caratterizzato dalla naturale presenza di antociani che lo colorano di viola e gli conferiscono un sapore eccellente.

INGREDIENTI

250 gr riso Violet
3 carote
3 zucchine
1 mazzetto di asparagi
1 cipollotto
rucola qb
sale qb
olio evo qb

Per la salsa:
240 gr cannellini precotti
2 c. succo di limone
2 c. olio evo
1 c.no lievito alimentare (facoltativo)
1 manciata di erbe aromatiche fresche a piacere
sale qb
pepe qb


– Cuoci il riso per assorbimento: 1 vol. di cereale x 2 vol. di acqua salata

– Affetta carote, zucchine e cipollotto. Pulisci gli asparagi eliminando la parte legnosa del gambo, tagliali a pezzetti conservando le punte e stufali in padella insieme alle altre verdure con un paio di cucchiai di acqua e un paio di olio evo fino a che non saranno cotte al dente.

– Prepara la salsa frullando tutti gli ingredienti fino ad ottenere una crema liscia. Sarà necessario aggiungere qualche cucchiaio di acqua. Per quanto riguarda le erbe aromatiche io ho utilizzato un mix di prezzemolo, basilico ed erba cipollina.

– Servi la bowl con il riso, le verdure stufate tiepide, la rucola ed abbondante salsa. Buon appetito

In this regard, cereal salads lend themselves to the purpose: they are extremely versatile, satiating and fresh.

Today I want to show you a delicious combo with Violet rice, a made in Italy excellence that you can also find in many supermarkets. It is a unique variety of rice because the whole plant cycle is characterized by the natural presence of anthocyanins that color it purple and give it an excellent flavor.

INGREDIENTS

250 gr Violet rice
3 carrots
3 zucchini
1 bunch of asparagus
1 spring onion
arugula to taste
salt to taste
evo oil to taste

For the sauce:
240 gr store-bought cannellini beans
2 tbs lemon juice
2 tbs olive oil
1 tsp nutritional yeast (optional)
1 handful of fresh herbs to taste
salt to taste
pepper to taste


– Cook rice by absorption: 1 vol. of cereal x 2 vol. of salt water

– Slice carrots, zucchini and spring onions. Clean the asparagus removing the woody part of the stem, cut them into pieces keeping the tips whole and stew them in a pan with the other vegetables using a couple of tablespoons of water and a couple of olive oil until cooked al dente.

– Prepare the sauce by blending all the ingredients until you get a smooth cream. You will need to add a few tablespoons of water. As for the aromatic herbs I used a mix of parsley, basil and chives.

– Serve the bowl with rice, warm stewed vegetables, arugula and plenty of sauce. Bon Appetit
