MUFFIN GLUTEN-FREE CIOCCOLATO & COCCO

Se parliamo di prima colazione, la mia mente pensa a dolci semplici e non troppo impegnativi da digerire.

Questi muffin al cioccolato e cocco sono perfetti. Sono totalmente privi di glutine ed hanno una consistenza compatta che li rende ideali per essere inzuppati.

Il gusto delicato del cocco si sposa a note di cacao e caffè, per iniziare la giornata con il piede giusto.

INGREDIENTI

  • 200 gr farina di riso
  • 30 gr farina di cocco o cocco rapé
  • 20 gr cacao amaro o 20 gr cioccolato fondente fuso
  • 140 gr zucchero semolato
  • 200 gr bevanda vegetale al cocco o soia
  • 40 gr olio di semi di girasole
  • 1 tazzina di caffè
  • 1 cucchiaino aceto di mele
  • 1 cucchiaino lievito per dolci
  • ½ cucchiaino bicarbonato

– Miscelate tutti gli ingredienti secchi. Il cucchiaino di lievito deve essere abbondante.

– Unite tutti gli ingredienti liquidi e mescolate velocemente fino ad ottenere un composto senza grumi.

– Oliate ed infarinate con la farina di riso uno stampo per muffin ed infornate in forno preriscaldato a 180° per 12 minuti.

– Lasciateli raffreddare su una gratella. Si conservano in un contenitore ermetico per un paio di giorni al massimo.

Consiglio: se desiderate utilizzarli come base per cup cakes, potete guarnirgli con panna montata veg, ganache al cioccolato o crema al burro vegetale.

GLUTENFREE CHOCO-COCONUT MUFFINS

 When we talk about breakfast, my mind thinks of simple sweets that aren’t too challenging to digest.

These coconut chocolate muffins are just perfect. They are totally gluten-free and have a compact consistency that makes them ideal for soaking.

The delicate taste of coconut is combined with notes of cocoa and coffee, to start the day on the right foot.

Servings: 12 muffins | Prep. time: 10 mins | Cooking time: 12 mins


INGREDIENTS

  • 200 gr rice flour
  • 30 gr coconut flour
  • 20 gr bitter cocoa or 20 gr melted dark chocolate
  • 140 gr granulated sugar
  • 200 gr coconut or soy non-diary milk
  • 40 gr sunflower seed oil
  • 1 espresso coffee
  • 1 tsp apple cider vinegar
  • 1 tsp baking powder
  • ½ tsp baking soda

– Mix all dry ingredients together. The teaspoon of baking powder should be plentiful.

– Add all the liquid ingredients and stir quickly until you get a mixture without any lumps.

– Grease and flour with the rice flour a mold for muffins and bake in the preheated oven at 180° C. for 12 minutes.

– Let them cool on a wire rack. Keep them in a container for a couple of days max.

Tip: if you want to use them as a base for cup cakes, you can garnish them with some soy whipped cream, chocolate ganache or vegan butter cream.
