LA PASTA FRESCA

Io e mia madre abbiamo sempre avuto la passione per il cinema e quando non potevamo andarci, noleggiavamo dvd o videocassette in quantità.
Ad esempio, iniziavamo a vedere un film all’ora di pranzo e proseguivamo fino a sera, senza pause.

Ricordo che una volta, avrò avuto più o meno dodici anni, durante le festività natalizie, facemmo una vera e propria maratona immergendoci in tre pellicole al giorno per sette giorni consecutivi. Per un’intera settimana pranzammo davanti alla tv, sedute sul tappeto, con il piatto in mano e lo sguardo perso dentro a quelle storie. Per un’intera settimana, non so perché, mangiammo ogni giorno la stessa identica cosa: la pasta al pomodoro ricoperta di parmigiano grattugiato.

Ancora oggi, quando ho bisogno di una coccola, o quando sono in vacanza, cucino questo piatto, e mi sento bene come allora. Con la differenza che adesso la pasta la faccio in casa. Vi spiego come.

INGREDIENTI

  • 400 gr semola rimacinata di grano duro
  • 210 gr acqua
  • 1 pizzico di sale
  • 2 cucchiai olio evo

– Versate la semola su una spianatoia o sul piano di lavoro. Formate un buco al centro, versatevi l’olio e il sale.

– Unite a poco a poco l’acqua ed amalgamare il tutto. L’acqua deve essere calda al punto da vederla fumare ma non tanto da scottarvi le mani.

– Impastate energicamente per circa dieci minuti fino ad ottenere una pasta dalla consistenza liscia ed elastica.

– Copritela con una ciotola e lasciatela riposare per almeno 15 minuti.

– Prelevate un pezzo di impasto e stiratelo in un cilindretto dello spessore di 7-8 mm circa, mantenendo il resto della pasta coperta per non farla seccare. Da qui potete creare i formati che preferite: orecchiette, cavatelli, scialatielli, etc.

– Io ho optato per le orecchiette, ritagliandone un quadratino, pressandolo e strisciandolo con il coltello e rigirandolo sul pollice per darli la tipica forma.

– Ho cotto la pasta immediatamente in abbondante acqua salata per 2.5 min e l’ho condita con un sugo semplice al pomodoro e un’abbondante grattugiata di formaggio veg. Semplicemente perfetta!

Consiglio: una volta preparata la pasta del formato che più vi piace, potete lasciarla riposare a temperatura ambiente per qualche ora in modo che si secchi un po’. In questo caso aumentate di un paio di minuti la cottura.

FRESH HOMEMADE PASTA

My mother and I have always had a passion for cinema and when we couldn’t go, we used to rent a lot of Dvds. For example, we started to see a movie at lunchtime and continued until the evening, without any break. 

I remember once, I was about twelve, during the Christmas holidays, we did a real marathon immersing ourselves in three films a day for seven consecutive days. For a whole week we had lunch in front of the TV, sitting on the carpet, with the plate in hand and our look lost in those stories. For an entire week, I don’t know why, we ate the exact same thing: pasta and tomato sauce covered with grated parmesan cheese.

Even today, when I need a cuddle, or when I’m on vacation, I cook this dish, and I feel as good as that time. Unlike that I make pasta from scratch now. I tell you how.

INGREDIENTS

  • 400 grams of durum wheat flour
  • 210 g water
  • 1 pinch of salt
  • 2 tablespoons extra virgin olive oil

– Pour the semolina on a pastry board or worktop. Form a hole in the center, pour oil and salt in.

– Add the water gradually and mix everything together. The water must be hot to the point of seeing it smoke but not so much as to burn your hands. 

– Knead vigorously for about ten minutes until you get a smooth and elastic dough. Cover it with a bowl and let it rest for 15 minutes at least. 

– Take a piece of dough and roll it in a small cylinder about 7-8 mm thick, keeping the rest of the dough covered so it won’t dry. From here you can create the pasta’ shapes you prefer: orecchiette, cavatelli, scialatielli, etc.

– I went for orecchiette, cutting out a square, pressing and crawling it with a knife and turning it on the thumb to give it the typical shape.

– I immediately cooked the pasta in plenty of salted water for 2.5 min and seasoned it with a simple tomato sauce and a hearty grated vegan cheese. Just perfect!

Tip: You can make the pasta in advance and let it rest at room temperature for a few hours so that it dries a bit. In this case, increase the cooking time by a couple of minutes.
