BLINIS AL GRANO SARACENO

Si avvicinano le feste e quella voglia di preparare piatti stuzzicanti per celebrarle al meglio con i nostri amici e parenti. Personalmente sono una patita degli aperitivi: mi piace tutto ciò che si mangia in un sol boccone e che mi invoglia a rimettere le mani nel vassoio, un finger food dopo l’altro.

I blinis sono dei piccoli pancakes salati e si prestano come base per creme spalmabili di ogni genere.

La presenza del grano saraceno li arricchisce di un gusto più rustico, perciò consiglio di abbinarli ad ingredienti dal sapore più deciso come una crema di pomodori secchi, una guacamole speziata o del formaggio vegetale accompagnato da confetture varie.

INGREDIENTI

  • 110 gr farina tipo 1
  • 30 gr farina grano saraceno
  • 240 ml bevanda di soia
  • 1 cucchiaio olio evo
  • ½ cucchiaino lievito istantaneo in polvere
  • 1 pizzico di sale

– Riunite tutti gli ingredienti secchi in una ciotola e miscelateli tra loro.

– Aggiungete a poco a poco tutti i liquidi, mescolando costantemente per eliminare eventuali grumi. Lasciate riposare l’impasto 5 minuti.

– Nel frattempo, scaldate una padella antiaderente e senza ungerla, versate mezzo cucchiaio di pastella per Blinis. Devono avere un diametro di circa 5 cm.

– Non appena si formeranno dei piccoli buchi sulla superficie, girateli e cuoceteli sull’altro lato.

– Guarniteli a piacere. Possono essere serviti sia tiepidi che a temperatura ambiente.

BUCKWHEAT FLOUR BLINIS

The holidays and the desire to prepare appetizing dishes to celebrate them at best with our friends and relatives are approaching. Personally I’m a fan of appetizers: I like everything you can eat in one bite and that makes me want to put my hands back in the tray, one finger food after the other.

Blinis are small savoury pancakes and they are perfect with spreads of all kinds.

The presence of buckwheat enriches them with a more rustic taste, so I recommend combining them with stronger flavor’ingredients such as a cream of dried tomatoes, a spicy guacamole or vegetable cheese and various jams.

Servings: 30 Blinis | Prep. time: 10 mins | Cooking time: 10 mins


 INGREDIENTS

  • 110 gr flour type 1
  • 30 gr buckwheat flour
  • 240 ml soy non-dairy milk
  • 1 tbsp extra virgin olive oil
  • ½ tsp baking powder
  • 1 pinch of salt

– Combine all the dry ingredients in a bowl. Add all the liquids gradually, stirring constantly to remove any lumps. Let the mixture rest for 5 minutes.

– Meanwhile, heat a non-stick frying pan and without greasing it, pour half of a tablespoon of batter for Blinis. They must have a diameter of about 5 cm.

– As soon as you’ll see some small holes on the surface, flip them and cook them on the other side.

– Garnish them according to your preferences. They can be served both warm and at room temperature.
