Regola numero 1: in cucina non si butta via niente.
Nel caso specifico mi riferisco agli scarti delle verdure. Ad esempio, con le bucce e le loro parti terminali si possono cuocere dei brodi squisiti, oppure con le foglie di carote e finocchi si possono preparare dei pesti e cosi via. Oggi ho di nuovo arrostito i Cavolini di Bruxelles alle noci e con le foglie esterne più coriacee ho ricavato queste squisite chips, perfette come snack o aperitivo. Peccato siano sempre troppo poche.
Dosi per: 1-2 persone | Preparazione: 10 minuti | Cottura: 25-30 minuti
INGREDIENTI
- Foglie di cavolini di Bruxelles
- olio extravergine qb
- peperoncino qb
- sale qb
– Dalla pulitura di 600gr di Cavolini di Bruxelles ricavate circa un paio di manciate di foglie.
– Lavatele ed asciugatele.
– Conditele con sale e peperoncino in polvere, dopo di che, con le mani unte di olio evo, massaggiatele accuratamente in modo da cospargere bene tutto il condimento.
– Infornate per circa 25/30 minuti a 120° statico fino a che saranno croccanti.
BRUSSELS SPROUTS CHIPS
Rule number one, you don’t throw anything away in the kitchen.
In this particular case, I am referring to vegetable waste. For example, with the rinds and their ends you can cook delicious broths, or with the carrots and fennels leaves you can prepare pestos and so on.
Today I roasted the walnut Brussels sprouts again and with the most leathery outer leaves I made these delicious chips, perfect as a snack. Too bad they’re always too few.

INGREDIENTS
- Brussels sprout leaves
- oil to taste
- chili pepper to taste
- salt to taste
– From the cleaning of 600gr of Brussels sprouts get about a couple of handfuls of leaves.
– Wash and dry them.
– Sprinkle them with salt, chili powder and a drizzle of extra vergin olive oil.
– Massage them thoroughly in order to coat them well.
– Bake at 120° for about 25/30 minutes till they are crispy.
