TARTELLETTE TOFU E SPINACI

Non appena arriva la primavera sono solita saltare in sella alla mia bicicletta ed andare in un’area verde molto grande che c’è vicino a casa mia. Li ci sono un fiume, grandi alberi, distese di prati e chilometri di pista ciclabile. E’ il posto perfetto per rigenerarsi e fare un pic-nic.
Tutti gli anni porto queste tartellette alla curcuma ripiene di tofu e spinaci. Sono delicate ma saporite, si possono servire tiepide o a temperatura ambiente e si conservano molto bene per un paio di giorni, perciò potete anche prepararle in anticipo.

Dose per: 10 pezzi | Procedimento: 15 minuti + 20 di riposo | Cottura: 20 minuti


INGREDIENTI

  • Pasta Matta
  • 50 gr farina tipo 1
  • 50 gr farina integrale
  • 20 gr olio evo
  • 50 gr acqua
  • 1 pizzico di curcuma
  • 1 pizzico di bicarbonato
  • sale qb
  • Ripieno
  • 250 gr spinaci freschi mondati
  • 100 gr tofu
  • 1 spicchio di aglio (facoltativo)
  • 2 cucchiai di olio evo
  • sale qb
  • pepe qb

– Preparate la pasta matta miscelando tutti gli ingredienti ed impastando fino ad ottenere un composto elastico e non appiccicoso.

– Lasciatela riposare coperta per 20 minuti circa.

– Nel frattempo, rosolate uno spicchio di aglio in padella. Aggiungete gli spinaci mondati e ancora bagnati. Salate e pepate secondo il vostro gusto e cuocete fino a che si saranno appassiti.

– Frullateli con il tofu, aggiustateli di sale e pepe ed avrete così ottenuto la farcia.

– Stendete la pasta tra due fogli di carta forno fino allo spessore di 2 mm circa.

– Ritagliate 10 dischi, posizionateli all’interno di uno stampo da muffin antiaderente, farcite con un cucchiaio di farcia per tortina ed infornate a 180 ° per 15-20 minuti circa.

TOFU AND SPINACH PIES

As soon as spring comes, I usually jump on my bike and ride to a very big green area near my house. There are a river, large trees, an expanse of meadows and miles of bike path.
It’s the perfect place to regenerate and to have a picnic. Every year I bring these turmeric mini pies filled with tofu and spinach. They are delicate but tasty, they can be served warm or at room temperature and they can last very well for a couple of days, so you can also prepare them in advance.

INGREDIENTS

  • Turmeric Pasta Matta
  • 50 gr all purpose flour
  • 50 gr whole wheat flour
  • 20 gr extra vergin olive oil
  • 50 gr water
  • 1 pinch of turmeric powder
  • 1 pinch of baking soda
  • salt to taste
  • Filling
  • 250 gr fresh spinach
  • 100 gr tofu
  • 1 clove of garlic (optional)
  • 2 tablespoons extra virgin olive oil
  • salt to taste
  • pepper to taste

– Prepare the pastry mixing all the ingredients together and knead it until you get an elastic and not sticky dough. 

– Let it rest covered for about 20 minutes.

– Meanwhile, sauté a clove of garlic in a pan. Add the washed and still wet spinach. Season with salt and pepper according to taste and cook until they are soft.

– Blend them with the tofu and season again with salt and pepper.
Here’s your stuffing.

– Roll out the dough between two sheets of parchment paper up to a thickness of about 2 mm.

– Cut out 10 disks, place them inside a non-stick muffin tray, fill with a spoonful of stuffing per mini pie and bake at 180° for 15-20 minutes approximately.
