SUGO RUSTICO AGLI ASPARAGI

Ci sono ricette che si fanno praticamente da sole, con pochi, pochissimi ingredienti.

Questo sugo rustico è costituito principalmente dagli asparagi e non servono altre aggiunte particolari per poter assaporare al meglio queste verdure di stagione.

Il risultato sarà un condimento delicato ma saporito, perfetto per condire la vostra pasta preferita.

INGREDIENTI

  • 500 gr asparagi mondati
  • 4 scalogni piccoli
  • 2 spicchi di aglio
  • olio evo qb
  • sale qb
  • pepe qb

– Ricavate da dei mazzi di asparagi 500 gr di gambe e punte edibili, eliminando quindi le estremità più legnose.

– Tagliate a rondelle molto sottili i gambi puliti e conservate le punte separatamente.

– Tagliate a fettine anche gli scalogni e metteteli in una casseruola con i gambi sminuzzati.

– Aggiungete un paio di cucchiai di olio evo, un goccio di acqua, sale, e cuocete a fuoco bassissimo comprendo con il coperchio.

– Ogni tanto controllate che l’acqua non si sia completamente assorbita e, nel caso, aggiungetene ancora un po’. Il sugo deve rimanere sempre umido fino a che gli asparagi di disfaranno in cottura formando una crema grossolana.

– Portate a bollore l’acqua salata per la pasta, tuffate per qualche minuto le punte di asparago e scolatele.

– Cuocete la pasta che preferite, conditela con il sugo rustico di asparagi e decorate con le punte. Un giro di olio e di pepe e buon appetito.

ASPARAGUS PASTA SAUCE

This coarse sauce is mainly made up of asparagus and no other special additions are needed to taste these seasonal vegetables at their best.


The result will be a delicate but tasty seasoning, perfect to dress your favorite pasta.

INGREDIENTS

  • 500 gr cleaned asparagus
  • 4 small shallots
  • 2 cloves of garlic
  • Extra vergin olive oil
  • salt to taste
  • pepper to taste

– Clean some bunches of asparagus in order to obtain 500 grams of stems and tips, thus cutting away the most woody ends.

– Cut the clean stems into very thin slices and store the tips separately.

– Cut the shallots into slices and put them in a casserole with the chopped stems. Add a couple of tablespoons of extra virgin olive oil, a drizzle of water, salt, and cook over very low heat covering with the lid.

– Every now and then check that the water has not completely absorbed and, if so, add some more. The seasoning must always remain moist until the asparagus will become a creamy coarse sauce.

– Bring the salted water for pasta to the boil, dip the asparagus tips for a few minutes and drain them.

– Cook the pasta you prefer, season with the sauce of asparagus and decorate it with the tips. A round of oil and pepper and good appetite.
