CONCHIGLIONI RIPIENI DI ZUCCA & PORCINI

Natale è spesso sinonimo di bagordi, di piatti succulenti e prelibati.
Fino a qualche anno fa era così anche per me. Ricordo che iniziavo i festeggiamenti una settimana prima e proseguivo spedita fino a Capodanno, con la pancia piena di cibo e alcol.

Oggi vivo questa ricorrenza in modo molto più raccolto. Il mio bisogno di intimità si traduce anche nella proposta culinaria, che deve avere un non so che di familiare.

I conchiglioni ripieni sono perfetti per celebrare il Natale.

Un piatto composto da ingredienti semplici che può essere preparato in anticipo con l’aiuto dei più piccoli e che darà gioia a tutti i palati.

INGREDIENTI

Pasta e ripieno:

  • 250 gr conchiglioni giganti
  • 600 gr zucca pulita (tipo Delica o Butternut)
  • 30 gr funghi porcini secchi
  • 1 cipolla rossa
  • 1 cucchiaio prezzemolo
  • 1 dose di crema al formaggio
  • olio evo qb
  • sale qb

Besciamella:

  • 500 gr bevanda di soia
  • 50 gr farina
  • 30 gr olio evo
  • 1 bustina di zafferano
  • sale qb

– Cuoci i conchiglioni in abbondante acqua salata, scolali, raffreddali sotto il getto dell’acqua corrente e irrorali con un filo di olio per non farli attaccare tra loro.

– Soffriggi la cipolla e la zucca tagliate a cubetti con un filo di olio.

– Una volta dorate, unisci i funghi precedentemente ammollati in acqua e prosegui la cottura.

– Aggiusta di sale. Trita grossolanamente il ripieno con il prezzemolo e la crema al formaggio.

– Prepara la besciamella. Fai un roux con olio e farina, unisci la bevanda vegetale, la bustina di zafferano, sale qb e porta a cottura.

– Posiziona la besciamella alla base di una teglia da forno. Farcisci le conchiglie con il ripieno e posizionale sulla crema. Cospargi di pangrattato e inforna a 180° per 15 min fino a che la superficie non sarà dorata.

Up until a few years ago, I felt the same way. I remember starting being festive a week earlier and going on until New Year’s Eve, with a belly full of food and alcohol.
Today I live this event in a much more confidential way. My need for intimacy also translates into my culinary dishes, which must recall a sense of family.

Stuffed pasta shells are perfect for celebrating Christmas.

A dish consisting of simple ingredients that can be prepared in advance with the help of the little ones and that will give joy to all palates.

INGREDIENTS

Pasta and filling:

  • 250 gr giant pasta shells
  • 600 gr pumpkin (type Delica or Butternut)
  • 30 gr dried porcini mushrooms
  • 1 red onion
  • 1 tablespoon parsley
  • 1 serving of cream cheese
  • evo oil
  • salt to taste

Béchamel sauce:

  • 500 gr soy milk
  • 50 gr flour
  • 30 gr evo oil
  • 1 pinch of saffron
  • salt to taste

– Cook the shells in plenty of salted water, drain, cool them under the running water and drizzle them with two tablespoons of oil to prevent them from sticking together.

– Sauté the onion and pumpkin cut into cubes with a drizzle of oil.

– Once golden, pour in the mushrooms previously soaked in water and continue cooking.

– Season with salt. Chop the filling coarsely with parsley and cream cheese.

– Prepare the béchamel sauce. Make a roux with oil and flour, combine the milk, a pinch of saffron, salt to taste and bring to cooking.

– Place the béchamel sauce at the base of a baking tray. Fill the shells with the filling and place them on the cream.

– Sprinkle with breadcrumbs and bake at 180 º for 15 min. until the surface is golden brown.
