SUGO DI ANACARDI E PEPERONI CORNO

Delle tante varietà di peperoni esistenti è un peccato trovare nei supermercati sempre solo una o due tipologie.
Per fortuna ci sono realtà territoriali che sanno valorizzare ciò che la natura ci offre, come l’Azienda Agricola Areté, in provincia di Bergamo, che coltiva Bio e fornisce alternative interessanti.
Ad esempio, quella dei peperoni corno rossi. Sono di piccole dimensioni e di forma allungata.
Il loro sapore è dolce e delicato e sono buonissimi sia crudi che cotti.
A me piace condirci la pasta e questo sugo non vi deluderà.
E’ perfetto per godersi le ultime giornate estive.

INGREDIENTI

  • 600 gr peperone corno rosso
  • 80 gr anacardi al naturale
  • 1 spicchio di aglio
  • 2 cucchiai lievito alimentare secco
  • sale – pepe qb
  • olio evo qb

– Ammollate gli anacardi in acqua calda.

– Sciacquate i peperoni sotto al getto dell’acqua corrente, asciugateli e massaggiateli con un goccio di olio evo.

– Posizionateli in una teglia insieme all’aglio in camicia, anch’esso leggermente oliato, e cuocete in forno caldo a 180° per circa 30 minuti.

– Spegnete il forno e lasciate intiepidire i peperoni al suo interno.

– Pelateli, eliminate semi e picciolo, metteteli nel boccale di un mixer e tritateli con gli anacardi scolati, l’aglio spelato, il lievito, sale e pepe ed un goccio di olio extra.

– Condite la pasta e buon appetito.

CASHEW AND CORNO PEPPER SAUCE

With all the varieties of peppers in existence it is a shame to find only one or two types in the supermarkets.
Fortunately, there are local areas that know how to enhance what nature offers us, such as the Areté Farm, in the province of Bergamo, which grows organic and provides interesting alternatives, such as that of corno red peppers. They are small and elongated in shape. Their taste is sweet and delicate and they are delicious both raw and cooked.
I like them as a dressing for pasta and this sauce is simple and tasty. 
Perfect to enjoy the last summer days.

INGREDIENTS

  • 600 gr corno red pepper
  • 80 gr cashew nuts
  • 1 clove of garlic
  • 2 tbsp nutritional yeast
  • salt – pepper to taste
  • evo oil

– Soak the cashews in hot water.

– Rinse the peppers, dry them and massage them with a drop of extra virgin olive oil.

– Place them on a baking tray along with the garlic, also lightly oiled, and bake them in a hot oven at 180° for about 30 minutes.

– Turn off the oven and let the peppers cool down. 

– Peel them, remove the seeds and the stalks, put them in a mixer and blend them with the drained cashews, garlic, yeast, salt and pepper to taste and an extra drizzle of extra vergin olive oil.

– Season your favourite pasta and enjoy your meal.
