RAGU’ DI SEITAN AL VINO ROSSO E CIOCCOLATO

Ecco a voi un grande classico della tradizione italiana rivisitato in versione vegana. Ciò che rende questo Ragù di Seitan cosi succulento non è solo l’utilizzo del vino rosso, ma anche l’aggiunta di un ingrediente speciale.

Il cioccolato fondente.

Avete capito bene! In questo caso il cioccolato ha la funzione di intensificare tutti gli aromi presenti nel sugo.  So che in genere il seitan non sia un alimento troppo stimato, ma vi assicuro che in questa ricetta sarà esaltato al massimo.
Armatevi di pazienza, cuocete tutto a fuoco lento e nel giro di un’ora circa avrete un condimento strepitoso per la vostra pasta. Buon Appetito.

INGREDIENTI

  • 250 gr Seitan
  • 700 gr passata di Pomodoro
  • 1 carota grande
  • 1 scalogno
  • 1 gambo di sedano
  • 1/2 bicchiere vino rosso (tipo Chianti)
  • 1 bicchiere di acqua
  • 3 foglie di alloro
  • 2 cucchiai erba cipollina
  • 2 cubetti di cioccolato fondente
  • 4 cucchiai di olio evo
  • Sale- pepe – peperoncino secondo il gusto

– Tritate lo scalogno, la carota, il sedano e rosolateli in una pentola con l’olio per qualche minuto.

– Aggiungete il Seitan precedentemente tritato stile “ragù” e fate saltare il tutto per cinque minuti.

– Salate e pepate, sfumate con il vino rosso e cuocete fino a che l’alcol non sarà evaporato. Ci vorranno circa due o tre minuti.

– Incorporate tutti gli altri ingredienti, fatta eccezione per il cioccolato e cuocete il ragù a fiamma bassa e coperto per circa un ora.

– A fine cottura unitevi il cioccolato e mescolate fino a farlo sciogliere completamente. Aggiustate di sale, pepe e peperoncino secondo il gusto.

Consiglio: Lasciatelo riposare per qualche ora prima di consumarlo e il gusto sarà ancora più intenso.

SEITAN’S RAGU’

Here is the vegan version of a great italian classic recipe.
What makes this Seitan’s Ragù so succulent is not only the use of red wine, but also the addition of a special ingredient.

It’s dark chocolate.

You got it right! In this case dark chocolate has the function of intensifying all the aromas in the sauce. I know that seitan isn’t generally a highly recommended food, but I assure you that in this recipe it will be amazing.  Be patient, cook everything on a low heat and within an hour or so you will have a delicious dressing for your pasta.  Enjoy.

Servings: 6-8 persons | Prep. time: 10 mins | Cooking time: 1 hr


INGREDIENTS

  • 250 gr Seitan
  • 700 gr Tomato sauce
  • 1 big carrot
  • 1 shallot
  • 1 celery stick
  • 1/2 glass of red wine (such as Chianti)
  • 1 glass of water
  • 3 bay leaves
  • 2 tbsp chopped chive
  • 2 dark chocolate cubes
  • 4 tbsp extra vergin oil
  • salt – pepper – cayenne pepper to taste

– Chop the shallot, carrot, celery and sauté them in a pot with the oil for a few minutes.

– Add the previously chopped “ragù” style seitan and sauté it for about five minutes. 

– Season with salt and pepper, blend with the red wine and cook until the alcohol has evaporated. It will take about two or three minutes. 

– Incorporate all other ingredients, except for chocolate and cook the sauce over low heat and covered for about an hour. 

– When cooked, add the chocolate and stir until it melts completely. Season with salt, pepper and pepper to taste.

Tip: Let it rest for a few hours before consuming it and the taste will be even more intense.
