SPAGHETTI AL LIMONE

Come ogni venerdì, il frigorifero è vuoto. L’ho aperto è ci ho ritrovato solo un limone solitario. La mia mente mi ha riportata ad un viaggio di qualche anno fa a Capri dove assaggiai i famosi e profumatissimi spaghetti al limone. Lo so, senza i limoni di Sorrento e l’olio locale non è la stessa cosa, ma ho provato lo stesso ad ispirarmi a questa meravigliosa ricetta della tradizione italiana ed il risultato è davvero incredibile.

INGREDIENTI

  • succo e scorza di un limone
  • 2 cucchiani burro vegetale
  • 2 cucchiai olio evo
  • 2 cucchiaini prezzemolo tritato
  • 1 spicchio di aglio (facoltativo)
  • sale qb
  • peperoncino qb

– Cuocete due porzioni di spaghetti in acqua bollente salata. Nel frattempo schiacciate l’aglio e mettete la purea in una ciotola.

– Aggiungete il burro a temperatura ambiente, 4 cucchiai di acqua di cottura e tutti gli altri ingredienti, fatta eccezione per il prezzemolo.

– Salate e montate a crema con una forchetta fino a che la salsa si sarà ben amalgamata. Ci vorrà circa un minuto.

– Scolate la pasta al dente, mescolatela alla salsa e guarnite con il prezzemolo.

LEMON SPAGHETTI

As every Friday my fridge is empty. I opened it and there was only one lonely lemon.
My mind took me back to a trip to Capri of a few years ago where I had the famous and fragrant spaghetti with lemon. I know, without Sorrento’s lemons and their local oil is not the same thing, but I tried to take inspiration from this wonderful recipe of the Italian tradition anyway and the result is really incredible.

INGREDIENTI

  • zests and juice of a lemon
  • 2 tsp vegan butter
  • 2 tbsp extra vergin oil
  • 2 tsp chopped parsley
  • 1 clove of garlic (optional)
  • salt to taste
  • cayenne pepper to taste

– Cook two portions of spaghetti in salted boiling water. Meanwhile mash the half garlic clove and put its puree in a bowl.

– Add the butter at room temperature, four tablespoons of the cooking water and all the other ingredients, except for the parsley.

– Season with some salt and whip the liquids for about 1 min till the sauce will be fluffy and well combined.

– Drain the pasta, add it to the sauce, mix all well and garnish with the chopped parsley.
