SPALMABILE ALLA BARBABIETOLA

Le barbabietole non mi sono mai piaciute. Da bambina mia madre mi obbligava a mangiarle per via delle loro innumerevoli proprietà, il che le rendeva ancora meno appetibili. Poi un giorno di due anni fa, durante un viaggio in Germania, ho provato quello che loro chiamano “Rotebete Aufstrich”.

BOOM!!! E’ stato amore al primo assaggio e ho subito capito che sarebbe bastato cucinarle modo diverso per poterle assaporare al meglio.

Ecco la mia saporita, piccante e rosa crema di barbabietole

Ottima sul pane tostato o abbinata ad un formaggio veg. I piu coraggiosi potranno anche utilizzarla per mantecare un risotto o per condire la pasta.

Dose per 4/6 persone | Procedimento: 5 Minuti | Cottura: 5 minuti


INGREDIENTI

  • 250 gr barbabietola cotta
  • ½ cipolla rossa
  • 80 gr semi di girasole
  • 2 cucchiai crema di rafano
  • 2 cucchiai Aceto di mele
  • 1 cucchiaio succo di limone
  • 3 cucchiai Olio evo
  • sale e pepe qb

– Tagliate la cipolla a cubetti e fatela rosolare in padella con un goccio di olio.

– In un robot da cucina riducete in farina i semi di girasole.

– Aggiungete tutti gli altri ingredienti, cipolla inclusa e tritate il tutto fino ad ottenere una crema liscia.

– Lasciate risposare in frigorifero per qualche ora prima di consumarla. Dura fino a 3 giorni.

BEETROOTS SPREAD

I never liked beetroots. As a child my mother forced me to eat them because of their innumerable properties, which made them even less attractive. Then one day of two years ago during a travel to Germany, I tried what they call “Rotebete Aufstrich”.

BOOM!!! That was love at first taste and I immediately realized that all I had to do was to cook it in a different way so that I could enjoy it more.

Here’s my tasty, spicy and pink beetroot spread

Excellent on toasts or combined with a veg cheese. The bravest can whisk it into a risotto or use it as a pasta dressing.

Servings 4/6 | Prep. Time: 5 mins | Cooking Time: 5 mins


INGREDIENTS

  • 250 gr Cooked Beetroot
  • ½ red onion
  • 80 gr Sunflower seeds
  • 2 tbsp horseradish paste
  • 2 tsbp apple sider vinegar
  • 1 tbsp Lemon juice
  • 3 tbsp olive oil
  • Salt & pepper to taste

– Chop and stir-fry the onion with a drizzle of oil.

– In a food processor, mix the sunflower seeds first, then add all the other ingredients, onion included and mix till the dip is smooth.

– Let it set in the fridge for some hours before use it. It lasts up to three days.
