INVOLTINI DI MELANZANE E COUS COUS

Le melanzane sono una delle mie verdure preferite e le cucino davvero in ogni modo. Gli involtini ripieni di cous cous sono facilissimi da realizzare e sono perfetti per quando si ha un ospite improvviso o non si ha semplicemente tempo per stare ai fornelli. Questa ricetta prevede pochissimi ingredienti di facile reperibilità, è light e bilanciata.

Dose per 4 persone | Procedimento: 20 minuti | Cottura: 10 minuti


INGREDIENTI

  • 4 Melanzane lunghe
  • 8 pomodorini ciliegino
  • 80 gr cous cous
  • 30 gr mandorle non pelate
  • 30 gr pangrattato
  • basilico qb
  • sale qb
  • olio evo qb

– Affettate le melanzane per il senso della lunghezza ad uno spessore di 2 o 3 mm millimetri. Se ne avete una, vi consiglio l’utilizzo della mandolina che vi semplificherà questo passaggio.

– Spennellate leggermente le fette con dell’olio evo e cuocetele su entrambi i lati su una griglia ben calda.

– Nel frattempo, preparate il cous cous: mettetelo in una ciotola, unite con un pizzico di sale e versateci sopra lo stesso peso di acqua calda.

– Coprite e lasciate che il cereale assorba tutto il liquido. Sgranate il cous cous con una forchetta, unite i pomodorini tagliati a pezzettini, basilico a fettine secondo il vostro gusto, regolate di sale e condite con un goccio di olio.

– Farcite ogni fetta di melanzana con un cucchiaino abbondante di ripieno, arrotolatele fino a formare degli involtini e trasferitele su una teglia leggermente oleata.

– Tritate grossolanamente le mandorle con il pangrattato, salateli leggermente e conditeli con un cucchiaio di olio evo.

– Lavorate con le mani fino ad ottenere un crumble e conspargeto sulle melanzane.

– Infornate per 10 min a 180° o fino a che la panatura non si sarà dorata.

COUS COUS EGGPLANT ROLLS

Eggplants are one of my favorite vegetables and I really cook them in every way possible. These cous cous rolls are very easy to make and they are perfect for when you welcome a guest at the last minute or you just don’t have time to spend in the kitchen. This recipe contains very few easy to find ingredients, it is light and balanced.

INGREDIENTS

  • 4 long eggplants
  • 8 cherry tomatoes
  • 80 gr cous cous
  • 30 gr unpeeled almonds
  • 30 gr breadcrumbs
  • basil to taste
  • salt to taste
  • evo oil to taste

– Slice the eggplant lengthwise to a thickness of 2 or 3 mm. If you have one, I recommend the use of the mandolin that will simplify this step.

– Brush the slices with some extra virgin olive oil and cook them on both sides on a hot grill pan.

– Meanwhile, prepare the cous cous: put it in a bowl, add a pinch of salt and pour over the same weight of hot water.

– Cover it with a lid and let the cereal absorb all the liquid. Shell the couscous with a fork, add the chopped tomatoes, basil according to your taste, season with salt and a drizzle of oil.

– Fill each slice of eggplant with a teaspoon of filling, roll them up and transfer them on a lightly oiled baking tray. 

– Chop the almonds coarsely with the breadcrumbs, season it lightly with salt and a tablespoon of extra virgin olive oil. 

– Mix all together until you get a crumble and pour it on the eggplants.

– Bake for 10 minutes at 180 º or until the breading is golden.
