VERDURE IN CREMA DI ANACARDI

C’è qualcosa di estremamente confortante nelle verdure al forno, specie se ricoperte da una cremosa besciamella.

Il gusto avvolgente degli anacardi è alla base di questa crema ricca ed aromatica che si sposa alla perfezione con qualsiasi verdura.

Per questo motivo lascio decidere a voi quali vegetali utilizzare per poter realizzare uno sformato creativo e di sicuro successo.

Dose per 4/6 persone | Procedimento: 5 minuti | Cottura: 10 minuti


INGREDIENTI 

  • 500 ml latte di anacardi
  • 25 gr burro vegetale o margarina
  • 50 gr farina 2 cucchiai succo di limone
  • 2 cucchiai lievito alimentare secco
  • Sale pepe e noce moscata qb

– Cuocete al forno delle verdure a vostra scelta. Io ho usato zucca, patate, finocchi, carote.

– Nel frattempo sciogliete il burro in un padellino, aggiungete la farina e mescolate bene preparando il roux, un agglomerato di farina e burro. –

– Aggiungete il latte a poco a poco mescolando fino allo scioglimento di ogni grumo.

– Aggiustate di sale pepe e noce moscata e cuocete a fiamma media fino a ottenere una besciamella cremosa.

– Versate sopra alle verdure e infornate di nuovo per 10 min. 

VEGETABLES IN CASHEW CREAM

There is something extremely comforting about baked vegetables, especially when they are covered by a creamy béchamel sauce.

The enveloping taste of cashews is at the base of this rich and aromatic cream that goes perfectly with any vegetable.

For this reason I let you chose your own vegetables to use in order to make a creative and successful flan.

Servings: 4/6 | Prep. time: 5 mins | Cooking time: 10 min


INGREDIENTS

  • 500 ml cashew milk
  • 25 gr vegan butter or margarine
  • 50 gr all purpose flour
  • 2 tbsp lemon juice 
  • 2 tbsp nutritional yeast
  • salt pepper and nutmeg to taste

– Bake some vegetables of your choice. I used pumpkin, potatoes, fennel, carrots.

– Meanwhile melt the butter in a pan, add the flour and mix well preparing the roux, a lump of flour and butter. 

– Add the milk gradually, stirring until each lump has dissolved.

– Season to taste with salt, pepper and nutmeg and cook over medium heat until you get a creamy béchamel sauce. 

– Pour over the vegetables and bake again for 10 min.
