HUMMUS DI PISELLI E CAROTE

Il consumo di legumi dovrebbe essere incrementato da parte di tutti, non solo da chi conduce uno stile di vita 100% vegetale, perché l’apporto di proteine, fibre e vitamine che ci regalano è importante per mantenere in salute il nostro organismo. Personalmente mangio legumi una volta al giorno, se non due, perciò mi piace diversificare al massimo le ricette che li contengono.

Questa crema spalmabile è una valida alternativa al classico hummus di ceci.

In questo periodo potete utilizzare i piselli freschi per ottenere il massimo nei nutrienti e del gusto, ma essendo sempre disponibili anche surgelati, potete prepararla in qualsiasi momento dell’anno. E’ ottima spalmata sul pane tostato, abbinata ad una pasta o accompagnata da verdure crude e cotte.

INGREDIENTI

  • 120 gr carote
  • 120 gr piselli
  • 1 cucchiaio tahina
  • 1 cucchiaio prezzemolo
  • ½ cucchiao succo di limone
  • ½ cucchiaino sale
  • olio evo qb

– Pelate le carote, tagliatele a cubetti e cuocetele in acqua non salata insieme ai piselli, fino a che entrambi saranno teneri.

– Conservate un po’ di acqua di cottura, scolate le verdure e lasciatele intiepidire.

– Nel boccale del mixer inserite tutti gli ingredienti, inclusi carote e piselli e frullateli aggiungendo gradatamente un po’ di acqua di cottura per rendere la crema soffice e spumosa.

– Per conferirle ancora più gusto, potete arricchirla con qualche cucchiaio di olio evo. In caso voleste mantenere la crema light, invece, omettete questo passaggio.

– L’Hummus di Carote e Piselli si conserva in frigorifero fino a tre giorni o, in alternativa, lo potete congelare per averlo pronto ogni volta in cui lo desiderate.

This spreadable cream is a valid alternative to the classic chickpeas hummus. 

In this season you can use fresh peas to get the most out of the nutrients and taste, but being always available frozen too, you can prepare it at any time of the year. It’s great spread on toasted bread, as a dressing for your pasta or accompanied by raw and cooked vegetables.

INGREDIENTS

  • 120 gr carrots
  • 120 gr peas
  • 1 tbsp tahina
  • 1 tbsp parsley
  • ½ tbsp lemon juice
  • ½ tsp salt
  • extra vergin olive oil to taste

– Peel the carrots, cut them into cubes and cook them in unsalted water along with the peas, until both are tender.

– Store some cooking water, drain the vegetables and let them cool a bit.

– Put all the ingredients into a food processor, including carrots and peas and blend everything by gradually adding some cooking water in order to make the cream soft and fluffy.

– To make it tastier you can enrich it with a few tablespoons of extra vergin olive oil.  In case you want to keep it light, just omit this part.

– The Carrots and Peas Hummus can be stored in the refrigerator for up to three days or, alternatively, you can freeze it to have it at hand whenever you want.
