POLPETTONE DI LENTICCHIE GLASSATO AL BALSAMICO

Uno dei cavalli di battaglia di mia nonna è sempre stato il polpettone ripieno che, a pensarci oggi, fa proprio pranzo della domenica in famiglia. Per celebrare le ricorrenze e festeggiare con un piatto prelibato, vi propongo la mia versione vegan.

Non è ripieno, ma è ricco di ingredienti succulenti come le lenticchie, le castagne e le noci ed è ricoperto da una glassa all’aceto balsamico, per una nota agrodolce che si sposa alla perfezione con il gusto pieno dello sformato.

Potete prepararlo in anticipo e cuocerlo poco prima dell’arrivo dei vostri ospiti. Accompagnatelo a delle patate arrosto o a degli spinaci ripassati in padella e farete felici tutti quanti.

INGREDIENTI

Per il Polpettone

  • 140 gr lenticchie marroni mignon
  • 1 carota grande
  • 1 gambo di sedano
  • 1 cipolla bionda piccola
  • 1 spicchio d’aglio
  • 100 gr castagne precotte
  • 20 gr barbabietola precotta
  • 50 gr noci sgusciate
  • 20 gr farina di ceci
  • 1 cucchiaio erba cipollina
  • sale – pepe qb
  • olio evo qb

Per la Glassa

  • 3 cucchiai ketchup
  • 1 cucchiaio aceto balsamico
  • 1 cucchiaio sciroppo d’acero
  • 1 cucchiaio di olio evo

-Sciacquate le lenticchie sotto al getto dell’acqua corrente per eliminare eventuali impurità.

– Riponetele in un tegame e copritele di acqua per due volte e mezzo il loro volume.

– Lasciate sobbollire fino a completo assorbimento dei liquidi o fino a che il legume non sarà tenero.

– Nel frattempo, preparate un soffritto con sedano, carota, cipolla e aglio ed una volta cotto, riponetelo nel boccale di un robot da cucina.

– Unite le lenticchie e tutti gli altri ingredienti del polpettone.

– Tritateli grossolanamente in modo che la consistenza resti leggermente croccante. Regolate di sale e pepe.

– Versate il composto in uno stampo da plum cake della dimensione di circa 20cm x 10cm e rivestito di carta forno, livellando bene la superficie con l’aiuto di una spatola.

– Per la glassa miscelate il ketchup con l’aceto balsamico, l’olio evo e lo sciroppo d’acero e versatela sopra al polpettone.

– Cuocete in forno statico a 180° per mezz’ora circa.

Consiglio:  Lasciatelo intiepidire leggermente prima di tagliarlo a fette.

LENTIL LOAF WITH BALSAMIC GLAZE

One of my grandmother’s strong point has always been the stuffed meatloaf and to think about it today, it reminds me of our family Sunday’s lunches. To celebrate the feasts and enjoy them with a delicious dish, I reccomend my vegan version.

It is not stuffed, but is rich in succulent ingredients such as lentils, chestnuts and walnuts and it is covered with a balsamic vinegar glaze, for a sweet and sour taste that goes perfectly with the richness of loaf.

You can prepare it in advance and cook it just before the arrival of your guests. Serve it with roast potatoes or sauté spinach and you will make everyone happy.

For the Lentil Loaf

  • 140 gr little brown lentils
  • 1 large carrot
  • 1 stalk of celery
  • 1 small blonde onion
  • 1 clove of garlic
  • 100 gr precooked chestnuts
  • 20 gr precooked beetroot
  • 50 gr shelled walnuts
  • 20 gr chickpea flour
  • 1 tbsp chives
  • salt – pepper to taste
  • evo oil to taste

For the Glaze

  • 3 tbsp ketchup
  • 1 tbsp balsamic vinegar
  • 1 tbsp maple syrup
  • 1 tbsp extra virgin olive oil

– Rinse the lentils to remove any impurities.

– Put them in a pan and cover with water for two and a half times their volume.

– Let them simmer until the liquid will be completely absorbed or until the legume is tender.

– Meanwhile, sauté the celery, carrot, garlic and onion cut into cubes and once cooked, place them in a blender

– Add the lentils and all the other ingredients of the loaf.

– Pulse to chop it coarsely so that the texture remains slightly crisp. Season with salt and pepper.

– Pour the mixture into a plum cake mold the size of about 20cm x 10cm and lined with parchment paper, leveling the surface well with the help of a spatula.

– For the glaze mix the ketchup with the balsamic vinegar, extra virgin olive oil and the maple syrup and pour it over the loaf.

– Bake in a static oven at 180 ºF. for about half an hour.

Tip: Let it cool slightly before cutting it into slices.
